Ingredients
  

  • 4 pieces Chicken leg quarters skin-on, bone-in
  • 2 tbsp Olive oil or melted butter
  • 1 tsp Salt to taste
  • 1 tsp Black pepper freshly ground
  • 1 tsp Paprika smoked or regular
  • 1 tsp Garlic powder or fresh minced garlic
  • 1 tsp Onion powder optional
  • ½ tsp Dried thyme or mixed herbs
  • 1 tsp Lemon juice fresh, optional

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Pat the chicken leg quarters dry with paper towels.
  3. Place chicken in a mixing bowl or on a baking tray.
  4. Drizzle olive oil over the chicken.
  5. Sprinkle salt, black pepper, paprika, garlic powder, onion powder, and dried thyme.
  6. Rub the seasoning evenly over all sides of the chicken.
  7. Arrange chicken skin-side up on a lined baking tray.
  8. Bake for 45 minutes until golden and cooked through.
  9. Check doneness by ensuring juices run clear.
  10. Rest for 5 minutes before serving.
