Soak wooden skewers in water for 20 minutes if using.
In a bowl, mix soy sauce, oil, garlic powder, salt, and black pepper.
Add chicken cubes and coat well with the marinade.
Thread marinated chicken onto skewers evenly.
Preheat grill pan or grill over medium heat.
Grill chicken skewers for 10–12 minutes, turning occasionally until cooked through.
In another bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
Brush bang bang sauce over hot skewers or drizzle on top before serving.
Garnish with chopped spring onions and serve immediately.
