BBQ Chicken Cottage Cheese Bowl Recipe

Ingredients
  

  • 1 cup Cooked chicken breast shredded or diced
  • 1 cup Cottage cheese full-fat or low-fat
  • ¼ cup BBQ sauce your favorite brand
  • ½ cup Cooked rice optional base
  • ½ cup Cherry tomatoes halved
  • ¼ cup Corn kernels fresh or frozen
  • ¼ cup Avocado diced
  • 2 tbsp Red onion finely chopped
  • 1 tbsp Fresh cilantro chopped, optional
  • ½ tsp Black pepper to taste
  • ¼ tsp Salt optional

Equipment

  • 1 Skillet or frying pan
  • 1 Mixing bowl
  • 1 Cutting board
  • 1 Knife
  • 1 Spoon

Method
 

  1. Heat a skillet over medium heat and warm the cooked chicken.
  2. Stir BBQ sauce into the chicken and cook for 2–3 minutes until coated.
  3. Prepare a serving bowl and add cooked rice as the base if using.
  4. Add cottage cheese to one side of the bowl.
  5. Spoon the BBQ chicken next to the cottage cheese.
  6. Add cherry tomatoes, corn, avocado, and chopped red onion around the bowl.
  7. Sprinkle with black pepper and a pinch of salt if desired.
  8. Garnish with fresh cilantro and serve immediately.
