- Heat a skillet over medium heat and warm the cooked chicken.
- Stir BBQ sauce into the chicken and cook for 2–3 minutes until coated.
- Prepare a serving bowl and add cooked rice as the base if using.
- Add cottage cheese to one side of the bowl.
- Spoon the BBQ chicken next to the cottage cheese.
- Add cherry tomatoes, corn, avocado, and chopped red onion around the bowl.
- Sprinkle with black pepper and a pinch of salt if desired.
- Garnish with fresh cilantro and serve immediately.
