Cheddar Stuffed BBQ Bacon Bombs Recipe

Cheddar stuffed BBQ bacon bombs are a bold and flavorful appetizer made with seasoned ground beef, melted cheddar cheese, and crispy bacon, brushed with barbecue sauce and baked to perfection.

Ingredients
  

  • 1 lb Ground beef 80/20 preferred
  • 1 cup Cheddar cheese cubed or shredded
  • 1 tsp Garlic powder seasoning
  • 1 tsp Onion powder seasoning
  • 1 tsp Smoked paprika optional
  • ½ tsp Salt to taste
  • ½ tsp Black pepper to taste
  • 12 slices Bacon thin-cut
  • ½ cup BBQ sauce your favorite brand
  • 1 tbsp Olive oil for greasing

Equipment

  • 1 Baking sheet Lined with foil
  • 1 Mixing bowl Medium size
  • 1 Wire rack Optional, for crisp bacon
  • 1 Knife Sharp
  • 1 Cutting board Prep work

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
  2. In a mixing bowl, combine ground beef, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Divide the beef mixture into equal portions.
  4. Place cheddar cheese in the center of each portion and shape into balls.
  5. Wrap each beef ball tightly with bacon slices.
  6. Arrange bacon bombs seam-side down on the prepared baking sheet.
  7. Brush each bacon bomb generously with BBQ sauce.
  8. Bake for 25–30 minutes until bacon is crispy and beef is cooked through.
  9. Remove from oven and rest for 5 minutes before serving.

Notes

  • Use thick cheddar cubes for a gooey center.
  • Secure bacon with toothpicks if needed.
  • For extra caramelization, broil for 2–3 minutes at the end.
  • Serve with extra BBQ sauce or ranch dip.
