Chicken Fajita Rice Bowls Recipe

Ingredients
  

  • 1 lb Chicken breast boneless, skinless
  • 2 tbsp Olive oil divided
  • 1 cup Rice long-grain or jasmine
  • 2 cups Water for cooking rice
  • 1 cup Bell peppers sliced, mixed colors
  • 1 cup Onion sliced
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • ½ tsp Ground cumin
  • ½ tsp Garlic powder
  • ½ tsp Salt to taste
  • ½ tsp Black pepper to taste
  • 1 tbsp Lime juice fresh
  • 2 tbsp Fresh cilantro chopped, garnish

Equipment

  • 1 Large skillet Cast iron or non-stick
  • 1 Saucepan For cooking rice
  • 1 Cutting board Prep work
  • 1 Knife Sharp
  • 1 Measuring spoons Optional

Method
 

  1. Cook rice according to package instructions and set aside.
  2. Slice chicken breast into thin strips.
  3. In a bowl, toss chicken with chili powder, paprika, cumin, garlic powder, salt, and black pepper.
  4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  5. Add seasoned chicken and cook until browned and cooked through.
  6. Remove chicken from skillet and set aside.
  7. Add remaining olive oil to the skillet and sauté bell peppers and onion until tender.
  8. Return chicken to the skillet and mix with vegetables.
  9. Drizzle with fresh lime juice and remove from heat.
  10. Assemble bowls with rice, chicken fajita mixture, and garnish with cilantro.
