Ingredients
  

  • 1 lb Chicken thighs boneless, skinless
  • 2 tbsp Olive oil extra virgin
  • 2 tbsp Lemon juice fresh
  • 3 cloves Garlic minced
  • 1 tsp Paprika smoked or regular
  • 1 tsp Cumin powder ground
  • 1 tsp Coriander powder ground
  • ½ tsp Turmeric ground
  • ½ tsp Black pepper freshly ground
  • ¾ tsp Salt to taste

For Garlic Sauce

  • ½ cup Greek yogurt full-fat preferred
  • 2 tbsp Mayonnaise optional, for creaminess
  • 2 cloves Garlic finely grated
  • 1 tbsp Lemon juice fresh
  • 2 tbsp Olive oil extra virgin
  • ¼ tsp Salt to taste

For Serving (Optional)

  • 4 pieces Flatbread or pita warmed
  • 1 cup Lettuce shredded
  • 1 cup Tomatoes sliced
  • ½ cup Cucumber sliced

Equipment

  • 1 Large bowl
  • 1 Skillet or grill pan
  • 1 Tongs
  • 1 Cutting board
  • 1 Knife

Method
 

  1. Combine olive oil, lemon juice, garlic, and spices in a large bowl.
  2. Add chicken thighs and toss until evenly coated.
  3. Cover and marinate for at least 2 hours.
  4. Heat a skillet or grill pan over medium-high heat.
  5. Cook chicken for 5–6 minutes per side until fully cooked.
  6. Remove chicken from pan and let rest for 5 minutes.
  7. Slice chicken into thin strips.
  8. In a bowl, whisk together all garlic sauce ingredients until smooth.
  9. Warm flatbread or pita.
  10. Assemble shawarma with chicken, vegetables, and garlic sauce.
  11. Serve immediately while hot.
