Lightly grease the crock pot with olive oil.
Place the chicken breasts in the bottom of the slow cooker.
Add minced garlic, Italian seasoning, salt, and black pepper over the chicken.
Pour chicken broth and heavy cream into the crock pot.
Add chopped sun-dried tomatoes and sprinkle parmesan cheese on top.
Cover and cook on low for about 4 hours until the chicken is tender.
Stir the sauce gently to combine all flavors.
Taste the sauce and adjust seasoning if needed.
Garnish with fresh basil before serving.
