Crockpot Pepper Steak Recipe

Ingredients
  

  • lb Beef sirloin or flank steak thinly sliced
  • 2 tbsp Olive oil for browning, optional
  • 1 cup Onion sliced
  • 2 cups Bell peppers sliced, mixed colors
  • 3 cloves Garlic minced
  • ¾ cup Beef broth low sodium
  • ¼ cup Soy sauce low sodium
  • 2 tbsp Cornstarch for thickening
  • 1 tbsp Brown sugar optional
  • 1 tsp Black pepper freshly ground
  • ½ tsp Ginger powder optional

Equipment

  • 1 Crockpot / Slow cooker 4–6 quart
  • 1 Cutting board For slicing beef
  • 1 Knife Sharp
  • 1 Mixing bowl For sauce
  • 1 Measuring cups Optional

Method
 

  1. Slice the beef into thin strips against the grain.
  2. Optional: lightly brown beef in a skillet with olive oil.
  3. Place sliced beef into the crockpot.
  4. Add sliced onions and bell peppers over the beef.
  5. Add minced garlic to the crockpot.
  6. In a bowl, whisk beef broth, soy sauce, brown sugar, black pepper, and ginger powder.
  7. Pour the sauce mixture over the beef and vegetables.
  8. Cover and cook on low for 6 hours or until beef is tender.
  9. Mix cornstarch with water and stir into the crockpot during the last 30 minutes.
  10. Cook until sauce thickens, then serve hot.
