Method
- Combine soy sauce, vinegar, water, garlic, bay leaves, and peppercorns in a bowl.
- Add chicken to the marinade and rest for 30 minutes.
- Heat oil in a large pot over medium heat.
- Sear the chicken pieces until lightly browned on both sides.
- Pour in the marinade and bring to a boil.
- Reduce heat, cover, and simmer for 25 minutes.
- Remove the lid and simmer for 5–10 minutes to thicken the sauce.
- Taste and add brown sugar if desired.
- Turn the chicken to coat with sauce.
- Serve hot with steamed rice.
