Filipino Chicken Adobo Recipe

A classic Filipino chicken adobo made by braising chicken in soy sauce, vinegar, garlic, bay leaves, and black peppercorns. This savory, tangy dish is rich in flavor and super easy to make.

Ingredients
  

  • 2 lb Chicken thighs or drumsticks bone-in, skin-on preferred
  • ½ cup Soy sauce low sodium
  • cup White vinegar or cane vinegar
  • 1 cup Water or chicken broth
  • 6 cloves Garlic crushed
  • 2 leaves Bay leaves dried
  • 1 tsp Black peppercorns whole
  • 1 tbsp Brown sugar optional, for balance
  • 1 tbsp Oil for searing

Equipment

  • 1 Large pot or Dutch oven
  • 1 Tongs
  • 1 Cutting board
  • 1 Knife
  • 1 Measuring cups

Method
 

  1. Combine soy sauce, vinegar, water, garlic, bay leaves, and peppercorns in a bowl.
  2. Add chicken to the marinade and rest for 30 minutes.
  3. Heat oil in a large pot over medium heat.
  4. Sear the chicken pieces until lightly browned on both sides.
  5. Pour in the marinade and bring to a boil.
  6. Reduce heat, cover, and simmer for 25 minutes.
  7. Remove the lid and simmer for 5–10 minutes to thicken the sauce.
  8. Taste and add brown sugar if desired.
  9. Turn the chicken to coat with sauce.
  10. Serve hot with steamed rice.

  • For deeper flavor, marinate overnight in the fridge.
  • You can crisp the chicken under a broiler for 3–5 minutes before serving.
  • Adobo tastes even better the next day.
  • Serve with steamed rice and pickled vegetables.
