Pat chicken thighs dry with paper towels.
In a large bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, paprika, salt, and black pepper.
Add chicken thighs to the marinade and coat well.
Cover and marinate for at least 30 minutes.
Preheat oven to 400°F (200°C).
Place chicken thighs skin-side up in a baking dish or oven-safe skillet.
Bake for 35 minutes until golden and cooked through.
Optional: broil for 2–3 minutes for crispier skin.
Remove from oven and rest for 5 minutes.
Garnish with fresh parsley and serve.
