Ingredients
  

  • 1 lb Ground beef lean
  • 2 tbsp Olive oil or vegetable oil
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Zucchini sliced
  • 1 cup Tomato sauce no sugar added
  • 1 tsp Italian seasoning dried
  • ½ tsp Salt to taste
  • ½ tsp Black pepper to taste
  • cups Shredded cheese mozzarella or cheddar
  • 2 tbsp Fresh parsley chopped, garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and sauté until softened.
  4. Stir in minced garlic and cook until fragrant.
  5. Add ground beef and cook until browned, breaking it apart.
  6. Drain excess fat if needed.
  7. Add tomato sauce, Italian seasoning, salt, and black pepper.
  8. Stir in sliced zucchini and cook for 3–4 minutes.
  9. Transfer the mixture to a greased baking dish.
  10. Sprinkle shredded cheese evenly on top.
  11. Bake for 30 minutes until bubbly and golden.
  12. Remove from oven and let rest for 5 minutes.
  13. Garnish with fresh parsley and serve warm.
