- Preheat oven to 400°F (200°C).
- Cut sausage into bite-sized pieces.
- Place sweet potatoes and sausage on a sheet pan or large skillet.
- Drizzle with olive oil and toss to coat evenly.
- Roast for 20 minutes, stirring halfway through.
- In a bowl, mix honey, garlic, and soy sauce.
- Pour honey garlic sauce over the roasted sausage and sweet potatoes.
- Return to oven and roast for 5 more minutes until glazed.
- Season with paprika, salt, and black pepper.
- Garnish with fresh parsley and serve hot.
