Ingredients
  

  • 1 lb Chicken breast boneless, skinless, diced
  • 1 tbsp Olive oil extra virgin
  • 2 tbsp Butter unsalted
  • 1 cup Onion finely chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth low sodium
  • 1 cup Heavy cream room temperature
  • 1 lb Potato gnocchi store-bought or homemade
  • 1 tsp Lemon zest fresh
  • 2 tbsp Lemon juice freshly squeezed
  • ½ tsp Salt to taste
  • ½ tsp Black pepper to taste
  • 2 tbsp Fresh spinach chopped
  • 2 tbsp Parmesan cheese grated, garnish

Equipment

  • 1 Wooden spoon

Method
 

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add diced chicken and cook until lightly golden.
  3. Add chopped onion and cook until softened.
  4. Stir in minced garlic and cook until fragrant.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Add gnocchi and cook according to package instructions.
  7. Stir in heavy cream, lemon zest, and lemon juice.
  8. Season with salt and black pepper and mix well.
  9. Add chopped spinach and cook until wilted.
  10. Simmer for 5 minutes until slightly thickened.
  11. Remove from heat and garnish with Parmesan cheese.
