A creamy and cheesy loaded cauliflower casserole packed with flavor, topped with melted cheese and savory toppings. This low-carb comfort dish is perfect as a side or main meal.

Ingredients
  

  • 1 large Cauliflower cut into florets
  • 2 tbsp Butter melted
  • 1 cup Sour cream full fat preferred
  • 1 cup Cheddar cheese shredded
  • ½ cup Mozzarella cheese shredded
  • 4 slices Turkey bacon cooked and crumbled
  • 2 tbsp Cream cheese softened
  • ½ tsp Garlic powder optional
  • ½ tsp Black pepper to taste
  • ½ tsp Salt adjust as needed
  • 2 tbsp Green onions chopped, for garnish

Equipment

  • 1 Large pot
  • 1 Baking dish
  • 1 Mixing bowl
  • 1 Knife
  • 1 Cutting board
  • 1 Oven

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Boil cauliflower florets in a large pot until tender, about 8–10 minutes.
  3. Drain cauliflower well and pat dry to remove excess moisture.
  4. In a mixing bowl, combine sour cream, cream cheese, butter, garlic powder, salt, and black pepper.
  5. Add cooked cauliflower and mash slightly while mixing.
  6. Stir in half of the cheddar and mozzarella cheese.
  7. Transfer the mixture to a greased baking dish.
  8. Top with remaining cheese and crumbled turkey bacon.
  9. Bake for 20–25 minutes until bubbly and golden.
  10. Garnish with chopped green onions and serve warm.

  • Drain cauliflower thoroughly to avoid a watery casserole.
  • You can replace turkey bacon with beef bacon if preferred.
  • Add chili flakes for a spicy twist.
