Pineapple Chicken Kabobs Recipe

Ingredients
  

  • 1 lb Chicken breast boneless, skinless, cubed
  • 2 cups Pineapple chunks fresh or canned, drained
  • 1 cup Bell peppers cut into chunks
  • 1 cup Red onion cut into chunks
  • ¼ cup Soy sauce low sodium
  • 2 tbsp Olive oil or vegetable oil
  • 2 tbsp Honey or brown sugar
  • 2 cloves Garlic minced
  • 1 tsp Ginger fresh grated or ground
  • ½ tsp Black pepper to taste

Equipment

  • 1 Skewers (wooden or metal)
  • 1 Grill or grill pan (preheated)
  • 1 Mixing bowl (for marinade)
  • 1 Tongs (for turning)
  • 1 Basting brush (optional)

Method
 

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a bowl, whisk soy sauce, olive oil, honey, garlic, ginger, and black pepper.
  3. Add chicken cubes to the marinade and toss to coat evenly.
  4. Marinate chicken for at least 30 minutes in the refrigerator.
  5. Preheat grill or grill pan to medium-high heat.
  6. Thread chicken, pineapple, bell peppers, and onion onto skewers.
  7. Place kabobs on the grill and cook for 12–15 minutes.
  8. Turn occasionally until chicken is fully cooked and lightly charred.
  9. Remove from grill and rest for a few minutes before serving.

Notes

  • Do not overcook chicken to keep it juicy.
  • You can bake kabobs at 400°F (200°C) if grilling isn’t available.
  • Add chili flakes for a spicy kick.
  • Serve with rice or salad for a complete meal.
