Soak wooden skewers in water for 30 minutes if using.
In a bowl, whisk soy sauce, olive oil, honey, garlic, ginger, and black pepper.
Add chicken cubes to the marinade and toss to coat evenly.
Marinate chicken for at least 30 minutes in the refrigerator.
Preheat grill or grill pan to medium-high heat.
Thread chicken, pineapple, bell peppers, and onion onto skewers.
Place kabobs on the grill and cook for 12–15 minutes.
Turn occasionally until chicken is fully cooked and lightly charred.
Remove from grill and rest for a few minutes before serving.
