Roasted Sweet Potato Kale and Quinoa Salad

A wholesome and vibrant salad made with roasted sweet potatoes, fresh kale, and protein-rich quinoa, tossed in a light dressing. Perfect for a healthy and filling meal.

Ingredients
  

  • 2 cups Sweet potatoes peeled and cubed
  • 2 tbsp Olive oil divided
  • 1 cup Quinoa rinsed
  • 2 cups Water for cooking quinoa
  • 2 cups Kale chopped, stems removed
  • ¼ cup Red onion thinly sliced
  • 2 tbsp Lemon juice fresh
  • 1 tbsp Maple syrup optional
  • ½ tsp Salt to taste
  • ½ tsp Black pepper freshly ground
  • ¼ cup Feta cheese optional, crumbled

Equipment

  • 1 Baking sheet
  • 1 Large bowl
  • 1 Saucepan
  • 1 Knife
  • 1 Cutting board

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes until tender.
  4. Rinse quinoa and cook with water in a saucepan until fluffy.
  5. Let quinoa cool slightly after cooking.
  6. In a large bowl, add chopped kale and massage with a little olive oil.
  7. Add roasted sweet potatoes, cooked quinoa, and sliced red onion.
  8. In a small bowl, whisk lemon juice, remaining olive oil, and maple syrup.
  9. Pour dressing over salad and toss well to combine.
  10. Top with feta cheese if using and serve
