Cook rice according to package instructions and set aside.
Heat olive oil in a large skillet over medium heat.
Add sliced sausage and cook until lightly browned.
Add shrimp and cook until pink, then remove and set aside.
In the same skillet, sauté onion, bell pepper, and celery until soft.
Stir in garlic and cook until fragrant.
Season with Cajun seasoning, paprika, salt, and black pepper.
Add cooked rice to the skillet and mix well.
Return shrimp and sausage to the pan and stir to combine.
Cook for 2–3 minutes until heated through.
Garnish with green onions and serve hot.
