Sweet Hawaiian Crockpot Chicken Recipe

A deliciously sweet and savory Hawaiian-style chicken made in the crockpot with pineapple, soy sauce, and brown sugar. This easy slow-cooker recipe is tender, flavorful, and perfect for busy days.

Ingredients
  

  • lbs Chicken breast boneless, skinless
  • 1 cup Pineapple chunks fresh or canned
  • ½ cup Pineapple juice from canned pineapple
  • ¼ cup Soy sauce low sodium
  • cup Brown sugar packed
  • 3 cloves Garlic minced
  • 1 tbsp Ketchup optional
  • 1 tsp Ginger grated or ground
  • 1 tbsp Cornstarch for thickening, optional
  • 2 tbsp Water for cornstarch slurry
  • 2 tbsp Green onions chopped, garnish

Equipment

  • 1 Crockpot / Slow cooker
  • 1 Mixing bowl
  • 1 Measuring cups
  • 1 Measuring spoons
  • Tongs

Method
 

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a mixing bowl, whisk pineapple juice, soy sauce, brown sugar, garlic, ketchup, and ginger.
  3. Pour the sauce evenly over the chicken.
  4. Add pineapple chunks on top.
  5. Cover and cook on low for 4 hours or until chicken is tender.
  6. Remove chicken and shred or slice if desired.
  7. (Optional) Mix cornstarch and water, stir into the sauce, and cook 10 minutes to thicken.
  8. Return chicken to the crockpot and coat with sauce.
  9. Garnish with chopped green onions before serving.
