Method
- Preheat oven to 375°F (190°C).
- Pat the pork loin dry with paper towels.
- In a bowl, mix olive oil, garlic, salt, black pepper, paprika, thyme, and onion powder.
- Rub the seasoning mixture evenly over the pork loin.
- Place the pork loin on a rack in the roasting pan.
- Roast uncovered for about 1 hour and 10 minutes.
- Check internal temperature using a meat thermometer.
- Remove pork from oven when it reaches 145°F (63°C).
- Let the pork rest for 10 minutes before slicing.
- Slice and serve warm.
