Ingredients
  

  • 3 lb Pork loin roast boneless
  • 2 tbsp Olive oil or melted butter
  • 3 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black pepper freshly ground
  • 1 tsp Paprika smoked or regular
  • 1 tsp Dried thyme or rosemary
  • ½ tsp Onion powder optional
  • 1 tbsp Dijon mustard optional, for extra flavor

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat the pork loin dry with paper towels.
  3. In a bowl, mix olive oil, garlic, salt, black pepper, paprika, thyme, and onion powder.
  4. Rub the seasoning mixture evenly over the pork loin.
  5. Place the pork loin on a rack in the roasting pan.
  6. Roast uncovered for about 1 hour and 10 minutes.
  7. Check internal temperature using a meat thermometer.
  8. Remove pork from oven when it reaches 145°F (63°C).
  9. Let the pork rest for 10 minutes before slicing.
  10. Slice and serve warm.
